Brussel Sprouts are one of those veggies who get a bad rep! Well, let me tell you, I was pretty skeptical myself [this was the first time I ever attempted to eat them, let alone cook them] but my mom convinced me otherwise.
What you’ll need for 2 servings:
-12 oz. brussel sprouts
-1/3 c. balsamic dressing
-salt and pepper
-6 strips of bacon
-1 small apple [I promise this is the end of my apple-recipe-streak]
Start by placing a sheet of parchment paper on a baking sheet with lips/edges. Place the strips of bacon on the paper and pop in the oven. Set the over for 400, and your timer for 15 mintues. DO NOT pre-heat the oven… Bacon will cook as the oven is heating to 400.
Wash and cut your b-sprouts in half if they haven’t already come prepared that way. Also cut and wash your apple, chopping it into small cubes. Toss both the apple and sprouts in a bit of olive oil, salt and pepper. Check your bacon when the timer is up. Since everyone’s oven is different, you may want to cook the bacon a little longer if it still looks too soft. This is how I like mine:
Remove bacon, and pour your sprout/apple mix onto the sheet, into the bacon grease. Cook sprouts in the bacon grease at 400, turning every 10 minutes. Again, every oven is different, so keep turing them every 10 minutes until you get the results you want.
Once the sprout/apple mixture looks like its finished cooking, toss it in some balsamic dressing and viola! You have a delicious side! You like brussel sprouts now, you’re welcome.
