As a small sacrifice, Hubs and I try to avoid eating meat on Fridays. I’ve had to add a couple fish recipes to my repertoire, and this by far is my favorite! This is my Paleo take on Damn Delicious’ recipe. I used to be pretty strict with having a clean eating/ Paleo diet. Once I got pregnant, it all pretty much went to hell because I was miserable as it was, and found consolation in eating whatever I wanted. Well, now that I have to be a superstar parent, set an example for my kid, and also shed those baby pounds, I’m back to the Paleo lifestyle.
So, I know ingredients such as honey and almond flour can be controversial when it comes to die-hard Paleo fanatics, but for my sake, let’s not debate it and just say these ingredients are a-ok!
-1 large salmon filet cut into 2, or 2 smaller salmon filets…
-2 TBS or so, of raw honey
-zest of 1/2 lime
-1/2 c. almond flour
-2 TBS olive oil
- Rub each filet with a little bit of zest, then dredge each salmon filet with 1 tablespoon flour and drizzle with 1 tablespoon honey.
- Heat olive oil in a large oven-proof skillet over medium high heat. Working in batches, add salmon to the skillet and sear both sides until golden brown, about 1-2 minutes per side.
- Place into oven and bake until completely cooked through, about 8-10 minutes.
- I also like to squeeze a little lime juice on my filets when they are fresh out of the oven, but that may be too much lime for some people… ENJOY!
Served with garlic roasted green beans and a sweet potato!
