Apple Turkey Burgers

What’s for dinner tonight?!

I’ve had my fair share of savory, apple recipes on this blog, but I’ll have you know, I acquired this one from a friend and it was SO good, I couldn’t help but share it with you.

Luckily, Hubs is an extreme couponer/deal hunter, so we always have a stockpile of food in the house. Why is this luckily? Because we basically have to hibernate in the winter. The past couple weeks we have had lows in the negatives with frostbite warnings and a number of winter weather advisories, which makes it almost impossible to justify taking a little baby out into the tundra for food. It is lucky because I have a provider who always makes sure there are meats in our freezer, canned vegetables, and other slow-to-perish food items, in our home.

The cool thing about this recipe is that it makes yummy burgers, but ALSO yummy mini cocktail meatballs. However you want to enjoy them, its up to you!

What you need:
2 tsp olive oil
1 medium onion, finely chopped or minced
1/2 small apple (Mac, Granny Smith), finely chopped
1 clove garlic, minced
1lb (1 package) lean ground turkey (or chicken, both work great!)
1/2 cup breadcrumbs ( I used glutino’s gluten free panko breadcrumbs)
3 tsp dried parsley
2-3 tbsp Parmesan cheese
1 tbsp tomato sauce, optional
1 egg, beaten

First sautee the onions, garlic and apples in a frying pan on medium heat, until ingredients become soft and limp. In a large mixing bowl, combine ground turkey, breadcrumbs, parsley, cheese, tomato, and egg. Once those ingredients have been combined, add the apple and onion mixture to the meat. [I kneaded this with my hands] Next, heat the olive oil in your skillet. While the oil is heating, form patties with the meat. Carefully lay the patties in the skillet to cook on medium heat [I did 5 mins on each side, then another 3 mins on each side…] Enjoy!
