Meatloaf

Wow, a recipe! Haven’t had one of those in awhile! And you know, I was never really a big fan of meatloaf. Having tried different recipes, I just couldn’t quite get the chemistry right. Some times it was too dry, too wet, not enough seasoning, etc. This week, I found a really simple recipe that was delicious, and I’ve even used the leftovers to make meatloaf sandwiches. Anyway, since this is supposed to be in part, a baking blog, here is my fantastic meatloaf recipe.

What you need:
[for the meatloaf]
1 lb. ground beef
1 egg
2/3 c. whole milk
1 c. bread crumbs
1 onion
1/2 c. finely chopped kale
salt and pepper to taste
[glaze on top of the meatloaf]
2 tbs brown sugar
1/3 c. ketchup
2 tbs mustard

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the beef, egg, onion, milk, kale and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.
  3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour.
