Apple Pie Cookies

This recipe started with me wanting to make apple pies, but not wanting to make a pie crust from scratch. And in fact, I didn’t even make the cookies from scratch. When you’re busy [and most people are] it’s OK to not make everything from scratch. I picked up a bag of my favorite sugar cookie mix for this recipe, and you can too. It is super easy, and is a great fall dessert.

What you need:
-1 pack sugar cookie mix
– eggs/butter/or shortening (whatever your mix calls for)
– 2/3 cup copped apple pieces
– 2 tsp cinnamon
**It really is that easy!**

Prepare your cookies according to the instructions on the packaging, add in the cinnamon, then knead the apple pieces into the dough before you roll them into balls for the baking sheet.

I never get sick of apple recipes in the fall, and this is a great one. Enjoy!
